Spicy Salmon Cucumber Cups

These Spicy Salmon Cucumber Cups are the perfect bite-sized hors d’oeuvres for a cocktail party. They’re a wonderful combination of creamy, spicy salmon and cool, crunchy cucumber. Best of all, they come together in about 15 minutes with no cooking required.

Ingredients

  • 8 oz sushi-grade salmon fillet, skin removed
  • 2 tablespoons Kewpie mayo 
  • 2 tablespoons sriracha sauce
  • 1 teaspoon soy sauce (or tamari for gluten-free)
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon minced chives
  • 1 scallion, finely chopped
  • 2 English cucumbers (peeled or skin on)
  • kosher salt to taste

Instructions

  1. With a sharp knife chop the salmon into small pieces and place in a medium bowl. 
  2. In a separate bowl combine the mayonnaise, sriracha, soy sauce, toasted sesame oil, scallions, and chives. Gently stir until the salmon is evenly coated with the spicy mixture. Taste and more sriracha and little salt if you like.  Set the mixture aside in the refrigerator while you prep the cucumbers.
  3. Slice into 1″ rounds.  Use melon baller or teaspoon to scoop out the center of each cucumber slice, but don’t go through to the bottom. You’re essentially making a bowl for the spicy salmon filling. 
  4. Spoon a generous amount of the spicy salmon mixture into each hollowed-out cucumber cup. Pile it high for a nice presentation.
  5. Serve immediately to ensure the cucumbers stay crisp and the salmon remains cold.

Modifications

Add a small slice of avocado on top for extra creaminess, or swap the salmon for tuna for a different variation.

  • For the freshest taste and texture, use sushi-grade salmon and prepare the filling just before serving.
  • To keep cucumber cups crisp, refrigerate them uncovered for up to an hour before assembling, and avoid overfilling to prevent excess moisture.
