Grilled Cheese Bites

These grilled cheese bites turn a classic comfort food into a party-ready appetizer. They’re crisp, buttery, cheesy, and finished with a small swipe of tomato paste and fresh chives.

Ingredients

  • 8 slices thick-sliced sandwich bread, such as Pepperidge Farm Hearty White Bread
  • 8 slices sharp cheddar cheese
  • 5 tablespoons unsalted butter, softened
  • 4 tablespoons mayonnaise
  • ½ teaspoon garlic powder
  • Tomato paste in a tube
  • Fresh chopped chives, for garnish

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Mix the garlic powder into the softened butter.
  2. Lay out 4 slices of bread and spread a thin layer of mayonnaise on each. Add 2 slices of sharp cheddar to each slice, then top with the remaining bread slices to make 4 sandwiches.
  3. Spread the garlic butter in a thin, even layer over the top of each sandwich. Flip and repeat on the other side so both sides are fully buttered.
  4. Place the sandwiches on the baking sheet. Bake for 6 to 10 minutes, then flip and bake for another 3 to 4 minutes, until golden brown on both sides and the cheese has melted.
  5. Let the sandwiches cool slightly, then remove the crusts. Cut each sandwich into 6 squares, then cut each square diagonally into triangles.
  6. Squeeze a small amount of tomato paste onto the angled side of each bite, garnish with fresh chives, and serve warm.

Hosting Tips

  • Serve them warm. These are best when the bread is still crisp and the cheese is soft.
  • Make them right before guests arrive. You can prep the sandwiches ahead, but bake and garnish closer to serving so they don’t lose their crunch.
