Kale & Cauliflower Salad

Kale & Cauliflower Salad

This is of my go-to winter salads. Not only is it really healthy, it’s also super quick and easy to make. And it’s a great way to use up leftover roasted vegetables.


  • 1 bunch kale (stalks removed and torn into small pieces)
  • 3 cups roasted cauliflower florets (or any roasted vegetables)
  • 1 lemon (juiced)
  • 1/4 cup extra virgin olive oil
  • 2 teaspoons honey
  • 1/4 cup toasted walnuts
  • salt to taste
  • pepper to taste


    For the salad dressing
  1. Add the lemon juice to a mixing bowl and slowly stream in the olive oil.
  2. Add the honey and salt to the olive oil/lemon juice.
  3. For the salad
  4. Add the kale and cauliflower to a serving bowl. Pour the dressing on the kale and cauliflower.
  5. Toss, add the walnuts and serve.
