
Kale & Cauliflower Salad
Kale & Cauliflower Salad
This is of my go-to winter salads. Not only is it really healthy, it’s also super quick and easy to make. And it’s a great way to use up leftover roasted vegetables.
Ingredients
- 1 bunch kale (stalks removed and torn into small pieces)
- 3 cups roasted cauliflower florets (or any roasted vegetables)
- 1 lemon (juiced)
- 1/4 cup extra virgin olive oil
- 2 teaspoons honey
- 1/4 cup toasted walnuts
- salt to taste
- pepper to taste
Instructions
- Add the lemon juice to a mixing bowl and slowly stream in the olive oil.
- Add the honey and salt to the olive oil/lemon juice.
- Add the kale and cauliflower to a serving bowl. Pour the dressing on the kale and cauliflower.
- Toss, add the walnuts and serve.
